First weekend in March

This weekend involved some much needed R & R. A brisk walk to the dog park, a refreshing haircut at Immortal Beloved, a delicious meal at Ted’s Bulletin and brunch and mass with friends.

All around, a great weekend. This week’s highlights: warm temperatures and getting to hang out with an incredible group of religious sisters. What’s not to love?

Salsa Verde Soup

Long time, no write! I wish I could say I’m figuring out this whole new work-life balance. I’m not. Well, at least not for the next month. Let’s just say until March 24th, sleep will be minimal and cooking meals will be few and far between.

One strategy that has really been working for us is cooking a big pot of soup at the beginning of the week, then just reheating individual bowls every night for dinner. We’re getting a home cooked meal the whole week and it only takes a few minutes of prep before the craziness of the week ensues.

One recipe that we really love is a mash up of several recipes we’ve combined. We’ve been calling it Salsa Verde Soup. Here’s the recipe!

You Will Need:

1 16 oz. carton chicken broth

1 cup cooked, shredded chicken

1 sweet potato, cubed

2 small cans cannellini beans, rinsed

½ red onion, diced

1 ½ cups salsa verde

a pinch of minced garlic

Optional: dollop of sour cream

In a large pot, sweat the diced onion and sweet potato with a dash of olive oil until slightly browned. Add the pinch of garlic and shredded chicken. Sweat for another two minutes.

(To “sweat” chopped vegetables, simply cook them in oil or other fat over low heat in a pan with a lid in order to soften them and release the moisture inside.)

Add the rest of the ingredients and simmer until the sweet potatoes are soft.



Dish out and enjoy with a dollop of sour cream on top!

Recent Favorite Things and Lessons Learned

I know you’re kind of supposed to post your favorite things at the end of the month in the blogger world. I guess I’m breaking the rules! I felt like I hadn’t done one of these videos in a while and I do have a few items to share.

A Georgetown Valentine’s Day

In the past, Matt and I have never really gotten into Valentine’s Day. We usually get each other a small gift and use it as an excuse to go out to dinner.

This year, even more that others, the holiday really snuck up on me! I kept telling Matt I didn’t get him anything but was going to go all out on a home cooked steak dinner (since apparently everyone in DC goes out to dinner and reservations are hard to come by).

But my husband enjoys surprising me. And man, this year, he really did!

On Thursday night, he told me to pack an overnight bag and bring it with me to work the next day. Once I got to work he told me not to metro home that night but to Uber to the Four Seasons in Georgetown where he’d booked a room! I definitely felt like Jennifer Aniston from an early 2000s rom-com.

The hotel is beautiful. Honestly the nicest place we’ve ever stayed. Everything was perfect! What a relaxing way to kick off a long weekend. I’m so thankful for my thoughtful husband who knows exactly when I need a little splurge and R and R.


The hotel even let us bring Bart! What a spoiled little dog. They brought up bowls, treats, and a dog bed for him.


I think the hotel thought it was our anniversary. We told them it wasn’t but they told us to enjoy the treats!



The details of our room were just gorgeous.
