Ingredients for crust:
-4 cups of All-purpose flour (and a little extra for rolling)
-1 teaspoon of sugar
-1 teaspoon of Active Dry or Instant Yeast
-1 teaspoon of Kosher Salt
-1/3 cup of Extra Virgin Olive Oil
Ingredients for pizza:
-2 cups of mushrooms
-1 pint of grape tomatoes
-1 red bell pepper, thinly sliced
-1 green bell pepper, thinly sliced
-1/2 cup of freshly grated Parmesan cheese
-2 cups (8 ounces) of thinly sliced Fresh Mozzarella Cheese
-E.V.O.O. for drizzling
-Salt & pepper for sprinkling
Instructions for crust:
-Mix yeast with 1½ cups of water.
-After yeast is mixed, add flour, sugar, and salt.
-In a separate bowl drizzle olive oil over all-purpose flour and mix. After thoroughly mixing, combine yeast/water mixture to the flour.
-Move the mixed dough into a separate bowl and form the dough into a ball. Drizzle with olive oil as needed, then cover the bowl with plastic wrap and store in the fridge.
Instructions for pizza:
-Slice mushrooms, bell peppers, and grape tomatoes. Sprinkle with salt and pepper.
-Preheat oven to 450 degrees.
-Drizzle cookie sheet with olive oil, coating the pan evenly. Remove half of the pizza dough from the bowl. Stretch pizza dough onto a rectangle cookie sheet pressing with fingers to finish forming.
-Drizzle pizza dough with olive oil and top with mozzarella slices, mushrooms, bell peppers, and tomatoes. Top with Parmesan cheese.
-Bake for 10-15 minutes; remove from pan, slice, and serve!
