It’s insanely tempting after a long day at work to swing by your local drive thru something and get a quick meal that’s hot and ready. Obviously this isn’t the best decision when it comes to our wallets or our health. Enter the slow cooker! The one I used for these recipes is from Aroma and it can be used for everything from easy dinners to hot coco or DIY spa recipes. It costs about $40.
Even in the summer time, there’s something so comforting and lovely about coming home to a warm, home cooked meal. Here are two of my favorite “1 pot” meals. You can throw everything in your slow cooker before leaving for the day and come home to a warm meal. What could be better!?
I purchased the ingredients for both of these recipes on the same shopping trip and my total was $38.
1. Minestrone Soup
You’re Going To Need:
1 onion, diced
3 cloves of garlic, minced
2-3 carrots, peeled and sliced
1 (28 ounce) can of diced tomatoes
2 (15 ounce) cans of cannellini beans, drained and rinsed
2.5 cups low-sodium vegetable stock
3 cups water
8 ounces of uncooked small pasta ( I used orecchiette)
12 thin asparagus spears, stems removed and cut into thirds
1 cup of frozen sweet peas
1 (6 ounce) bag of fresh spinach
1/3 cup freshly grated romano or parmesean cheese for topping
salt and pepper to taste
Here’s What You Do:
Add diced onions, garlic, carrots, the whole can of diced tomatoes, cannellini beans, stock and water to your slow cooker. Cook on low for 4-6 hours.
About 10-15 minutes before serving, add spinach, peas and pasta. Cook on low for another 10-15 minutes (while you’re taking off those work threads and jumping into some sweat pants!:)) then stir in your fresh cheese. Add some salt and pepper if needed and enjoy!
2. Chicken Tortilla Soup
You’re Going To Need:
1 lb boneless chicken breast
15 oz. can sweet corn, drained
15 oz. can diced tomatoes, drained
5 Cups of chicken stock
3/4 C chopped onion
2 cloves of garlic, minced
1/4 tsp chili powder
1 jalapeno, diced – I only use a half because I don’t like it too spicy.
Monterey Jack Cheese, shredded
Salt/pepper to taste
What You Do:
Add the first eight ingredients to your slow cooker and cook on low for 6-8 hours.
Before serving, remove the chicken breast and shred. Season your chicken with a bit of salt, pepper.
Add the chicken back to your soup and stir gently. Serve with a bit of cheese on top. Enjoy!
