On Valentine’s Day, I ate the most delicious strawberry shortcake ever while dining out.
I was remembering and craving it a few days later, but didn’t want to make the trek or shell out the dinero for the same cake. So, I made cake in a mug!
I didn’t have any strawberries but I did have a few raspberries. So, I put them to work in this cake. It’s simple and I love that there is practically no cleanup required.
You will need:
5 1/2 tablespoons all-purpose flour
4 tablespoons sugar
1/8 teaspoon baking powder
3 tablespoons milk
3 tablespoons oil
3-4 raspberries cut into small pieces
Combine all ingredients except strawberries into an oversized mug. Stir with a small whisk or fork until batter is smooth. Carefully drop raspberry pieces on top.
Microwave for 1 1/2 minutes. If cake is not done, microwave for an additional 30 seconds. Serve while warm.
