An Easter Brunch Casserole

For as long as I can remember, my mom has made an egg casserole for most major holidays. It would go in the oven when we started opening the gifts or cards, and it was piping hot and delicious the moment the last gift was unwrapped. When I got married, I found out my husband’s mother does exactly the same thing! Needless to say it is a tradition I will continue. Here’s a variation of that recipe for your enjoyment! 6 – 10 eggs
2 -3 cups of grated cheddar cheese
6 slices of bread (cubed & without the crusts)
2 cups of milk

Possible additions:
green onions

Preheat oven to 350°F. Beat the eggs in a large bowl. Mix in the milk and cheese. Add the bread pieces and carefully stir until all are moistened. (Don’t over mix or the bread may disintegrate.) Fold in any additions. Add salt and pepper to taste. Grease a 13 x 9 inch casserole dish. Pour mix into casserole dish. Bake in oven for 50 minutes to an hour, until the top is browned and the center springs back when touched. Remove from the oven and let cool for 10 minutes before serving.
