When I was younger, breakfast was my least favorite meal of the day. I think it was because I preferred to sleep the extra twenty minutes and grab a juice on the way out the door. As I’ve grown up, I have learned that there actually is a reason they call it the most important meal of the day. This, coupled with my budding foodie status, means I’ve been experimenting, trying, and tasting various cost effective and delicious breakfast recipes. Here is a recent favorite that is perfect for hosting a brunch or a lazy Sunday morning with your love.
Ham, Egg, and Cheese Breakfast Tarts
You will need:
flour (for dusting)
1 sheet puffed pastry
approximately 1½ cups goat cheese (I like the honey goat cheese from Trader Joe’s)
4 slices cooked ham
salt and pepper for seasoning
*Optional: Fresh chives or spring onions for topping
What to do:
Preheat your oven to 425 degrees. Line a baking sheet with parchment paper. On a lightly floured surface, roll out the puff pastry, then cut into four equal squares. Slightly fold and pinch the edges of each square to form four round tart shells. Transfer to the baking sheet and prick all over with a fork. Bake 8 to 10 minutes until golden.
Heat the ham in a skillet over medium heat, turning, until crisp. Transfer to paper towels to drain any excess oil.
Let the tart shells cool slightly on the baking sheet. If the centers are puffy, prick with a fork to deflate. Sprinkle evenly with the goat cheese. Make a shallow well in the center of each tart, then crack an egg into each; season with salt and pepper. Top with the ham (sliced), then return to the oven and bake until the egg whites are set, 10 to 15 minutes. Top with chives or spring onions. Enjoy!
Since I was only cooking for two, I decided to pair my savory tart with a sweet one! I mashed up a few blackberries with a bit of honey and cinnamon. Delicious!
