Cassandra’s Favorite Guacamole Recipe

What makes this my favorite guacamole recipe is that it is simple, and really all about the avocado.

You will need:

2 ripe avocados

1/2 small red onion, finely diced

1-2 limes for juice

1 tsp coriander, crushed

1/2 tsp cumin

salt & pepper

1 tbsp chopped cilantro

2 tbsp cotija for garnish

Start by dicing the red onion. After dicing, let it soak in a bowl of cold water while you prepare the rest of the ingredients. (This takes out some of the raw onion harshness.) Remove the flesh of the avocados, juicing one lime over each avocado. (You can add more lime juice later for flavor should it need it.) Smash the avocados with your weapon of choice, adding in seasonings, and salt and pepper to taste. (Be sparing with the salt — the chips and cotija are often salty enough.) Drain the onion and stir it into the mixture. Add cilantro, blending it in carefully so as not to over bruise. Top it all off with cotija cheese, and serve with your favorite chips!
