Cran-Apple Granola Bark

During the fall season there’s nothing quite like grabbing a handful of homemade granola and spending the cold mornings enjoying something not only delicious and sweet, but healthy as well. Granola bark is an easy grab and go breakfast that gives a nice spring to your step. It’s a great alternative for anyone looking for something not too heavy, but still so decadent!

You will need:

food processor (or blender)

2 cups oats

6-8 dates

¼ cup applesauce

handful of dried cranberries

2 Tbsp honey

Optional: cinnamon

What you do:

  • Preheat the oven to 350 degrees. Spread the oats on a baking sheet and toast them in the oven for about 7-10 minutes.

  • Blend the dates until they reach a paste-like consistency. Combine both dates and applesauce in a bowl and mix until the color is a brown sugar hue.

  • Remove the oats from the oven (keeping the oven on for later), and let cool for about 5 minutes. Pour the oats in with the combined dates and applesauce. Add the honey and dried cranberries and mix it all together. When finished mixing, the oats should be well coated by the wet ingredients.

  • Line a baking pan with waxed or parchment paper and lightly oil the paper to prevent any sticking. Spread the granola mixture into the baking pan evenly. Cinnamon may be sprinkled atop the granola spread for extra flavor.

  • Put the baking pan back into the oven and bake the granola for 40 minutes.

  • Once finished, let the granola cool completely. You’ll see that it will soon reach a nice, crunchy texture.

  • This is the fun part. Since it’s granola bark, there’s no need to worry about making perfect squares — just break off as big or as little pieces as you wish. Soon enough, you’ll have yourself your very own granola bark that everyone can enjoy!

  • It’s okay if small bits and pieces break off. Store these rogue pieces in a small jar and keep them as toppings for later.
