My husband recently started eating according to the primal diet. This has definitely changed our weekly grocery hauls and dinner recipe options.
I recently tried a simple recipe for pizza sticks that uses cauliflower in place of traditional pizza crust. I was certainly skeptical, but it actually tasted delicious!
Cauliflower Pizza Sticks
You will need:
1/2 of a head of a large cauliflower, “riced” (grated to a coarse texture)
1 tsp extra light olive oil
2 cloves garlic, minced
1 large egg white, lightly beaten
1/2 cup mozzarella or parmesan cheese
seasoning of your choice — I used basil and oregano & a bit of salt and pepper
marinara sauce for dipping
What you do:
Preheat oven to 350. Line a sheet pan with parchment paper and grease with a bit of oil. Place your riced cauliflower in a microwaveable bowl and microwave until softened — about 5 minutes.
Heat the olive oil in a small skillet over low heat and add garlic. Cook until garlic is soft.
In a large bowl, mix egg white, garlic, cauliflower, seasonings and 3/4 of the cheese. Spread mixture into prepared pan. Bake until it starts to turn golden brown — about 30 minutes.
Remove from oven. Flip the loaf over so bottom side is now on top, and sprinkle remaining cheese on top. Bake for 10 more minutes or until the cheese is golden and bubbly. Allow the loaf to cool until it hardens slightly, then cut into several pieces.
Enjoy with a side of marinara sauce!
