Growing up, one of our family dinner staples was baked potatoes. My mom would lay out all sorts of toppings and let us pick and choose how we’d like them.
Recently, my husband has been eating according to the primal diet and that excludes russet potatoes. He can, however, eat sweet potatoes. I decided to take the potato bar idea and just sub in sweet potatoes for classic!
After washing the sweet potatoes, I rub a bit of olive oil on the outside, stab a few holes in each one and wrap them in aluminum foil. Depending on the size, they take about forty minutes in a 375 degree oven to bake.
I cook up a bit of bacon to add some crunch and saltiness.
Our other toppings usually include cheese, chives, and a dollop of sour cream.
We’ve had these for dinner at least 5 times in the last two weeks! #noshame
They also pair incredibly well with Woodchuck Hard Cider.
