Inspired By: Chicken Dijon

I watch a lot of different channels on YouTube. I love seeing what other content creators are doing!

One of my favorite cooking channels out there is Entertaining With Beth. Every Saturday, Beth shares recipes that are elegant enough for entertaining, but also simple enough for a weeknight meal. I recently gave this recipe a whirl and thought I would share the adjustments I made to the recipe using what I already had in my kitchen.

When I made this meal, I actually just roasted the asparagus in my oven. I trimmed the stalks, drizzled some oil over them, added salt and pepper, then let them roast in a 400 degree oven for about 12 minutes.

Also, I didn’t have chicken broth or tarragon, so I used vegetable broth and a pinch of fresh thyme when making the dijon sauce.

This meal was so simple, and perfect for a quick weeknight dinner. Thanks for sharing, Beth!
