Overnight Mixed Berry Chia Seed Pudding

Chia seeds are everywhere. They are the trendiest food since quinoa! These little seeds are from a plant called salvia hispanica, which is actually related to mint! They are high in protein, fiber, antioxidants, and omega-3s.

Because they don’t have much of a taste on their own, it’s really easy to incorporate chia seeds into your diet. You can add them to smoothies or baked goods, but my favorite is to make a mixed berry pudding — perfect for a quick breakfast!

You will need:

⅓ cup black chia seeds

⅔ cup milk (regular, almond, coconut, whichever you like)

a handful of frozen berries

a bit of honey for sweetness

What you do:

In a sealable jar, combine chia seeds and milk. Top with a few mixed berries and a splash of honey for sweetness. Seal and place in the refrigerator overnight! In the morning, the seeds will be plump and the mixture of a pudding consistency. Give it a stir and enjoy!
